Veggie Pesto Lasagna

OK, so I’m a little obsessed with pesto and make HUGE batches of it. But YOU certainly don’t have to get that nerdy – The Neely’s recipe actually calls for store-bought pesto.

In fact, this can be a pretty dang “quick” lasagna with store-bought pesto AND no-boil lasagna noodles. (Most typical grocery stores have these items in the pasta/sauce aisle.)

My meat lasagna? Ya gotta simmer the sauce for at least an hour, preferably two. With this recipe, ya only simmer the sauce for 20 minutes… And by the time it’s done simmering, you’re done mixing up the ricotta/pesto/spinach mixture, as well as grating the cheeses (unless you buy pre-shredded, then Good For You, you get a little break before putting the lasagna together and popping it in the oven.)
