If you’re a Hater, Get to Love Leftovers!
Ok, typically, I don’t like leftovers. Many meals do NOT reheat well, plus I’d just prefer to have something fresh every night.
But HELLO, I hate cooking, and my hate far outweighs my need to have something new every single night.
Which is why there is a Leftovers Night built into my meal plan every single week.
Soups, stews & chilis reheat best because the meat components don’t get dried out during the reheating process.
Some people feel that “soup” is not a meal… Well MINE is! I make hearty soups, and I often serve them with garlic bread… So no one is ever left hungry in THIS house ?
Another reason stews/soups/chilis are ideal is because most of us don’t want the same dinner tonight that we had last night. Stews/soups/chilis have a better fridge shelf life than most other meals that would dry out in the fridge much more quickly.
And yet a THIRD reason stews/soups/chilis are the best leftovers meal is because they will likely freeze better than other dinners. Ya know, in case you decide you don’t want to have it this week… But don’t want to waste it either.
The key to making Leftovers Night work (or leftovers for lunch) is to think of meals you LOVE that will likely reheat well, and double those recipes.
There are certain leftovers I’ll never turn down. I’m gonna heat up some spicy Asian-style chicken noodle soup for lunch, for instance.
Or maybe for breakfast… I can’t wait to eat it!!! ?
