Fancy Sandwiches!
Fancy sandwiches are one of my favorite kinds of quick/easy meals. Even when I don’t have leftover chicken to use, certain sandwiches can still be pretty quick. One of my faves is Martha Stewart’s Apricot Chicken Melt. I LOVE sweet and salt together, so this fancy sandwich is right up my alley.

Another fave of mine? Chicken pesto paninis! Since I make/freeze my own pesto, this sandwich is a fave because I almost always have all the ingredients on hand – We always have chicken, good bread, pesto, some kind of cheese, and some kinds of veggies around.
And to keep things EASY, I often serve the fancy sandwiches with freezer aisle sweet potato fries ?
