My friend passed along this Rachael Ray recipe many years ago, and it gave me new love for meatloaf, muffin-style, that is 😊
My problem with old school meatloaf made in a 9″ X 5″ pan is that the edges would be dry by the time the middle was done cooking.
Enter the meatloaf muffin – Each muffin is juicy and delicious!!
(P. S. Rachael’s recipe is delish and would work with other ground meats as well! Plus there are so many interesting variations on meatloaf out there, it’s a fun recipe to experiment with 😉 AND it can be pretty quick, with very little prep/active cooking time!)
